Currently I’m baking a baby and I’m not overly concerned with tracking all my food, however, once this baby is born it will be back full force into meal prepping and tracking macros. Several years ago I started tracking macronutrients and found it was the easiest and best way for me to keep my nutrition in check while also losing weight. Since then I have tried my best to find amazing macro dense recipes to get the most out of my food everyday.
I stumbled upon making these waffles one day and using a very non-traditional topping on them that has since then kept me hooked. I mean who thinks of topping their waffle with yogurt? Well, let me tell you it will be the best decision ever!
My favorite yogurt to top my protein waffles with are any of the Dannon® Oikos® Traditional Greek Yogurts. But favorites are definitely the strawberry and banana cream.
You can find them at your local Walmart and can even use an iBotta offer to save some money. If you’re like me and like to get lots of different flavors you can use this coupon to save on single cups >>> https://ooh.li/180ef99
Or if you love what you love (or love Oikos as much as my kids do!) and like to buy the 4-pack you can save on those here >>> https://ooh.li/356cc4e
Alright, on to the recipe!
The Best Protein Waffles
Ingredients
14 grams coconut flour
40 grams oat flour
95 grams egg whites
1/2 cup unsweetened vanilla almond milk
2 tsp baking powder
14 grams protein powder
Mix all your ingredients together EXCEPT the almond milk. Once all the ingredients are mixed well, slowly add in the almond milk until you find the consistency you like best. I like my waffles a little thicker, so I tend to go a little lighter on the almond milk.
Also, give it a couple minutes to let the coconut flour set with the liquids. It will slowly get thicker as it sets.
Another tip: If you like fluffier waffles (or pancakes)
Throw your batter into your waffle maker and top with your favorite Dannon Oikos Greek Yogurt! There you have the very best protein waffles I’ve ever had (or made!). These are so, so great for meal prep. They reheat really well and the yogurt really helps to keep you from getting a dried out taste.
