No Bake Energy Bites

Who could use a quick easy morning meal prep?! Mornings around here are CRAZY TOWN. I’m up early to work before the boys get up and only have about a 30 minute window between being done with work and having to be out the door for school! Yep, I live life in the fast lane. So I am always in need of breakfast on the go for the boys.

I rotate between a few “finger foods” that I can have packed and ready to toss back to them while we’re on our way to school in the morning. These no bake energy bites are easily my go-to for my busy mornings with only a few ingredients needed and a super quick prep time. I usually end up doubling the recipe so I can have some prepped for the week. Another favorite about these is they are easily freezable! So you can prep several batches and toss them in the freezer to grab and thaw when needed.

All my ingredients I purchased at my all-time favorite, Aldi. They are kid approved and one of my favorite snacks. Hope you enjoy them too!

No Bake Energy Bites

Measure out all your ingredients and toss them into a bowl.

Mix ingredients well! Make sure all the oats and peanut butter are well combined.

Make tablespoon sized balls of the mixture and set on a cookie sheet lined with parchment paper. I usually get about 12-13 balls per batch. Cover with plastic wrap and chill for 30 minutes.

I prefer to make the balls first before chilling the mixture. You can chill first if you prefer, but the mix seems to get too hard to mix after it’s been chilled which is why I chill after.

I really hope you enjoy these! They are a favorite here in our house and are always a big hit when I make them for company. 🙂

Try not to eat them all at once!

 

Ingredients

1 cup old fashioned oats
2/3 cup coconut flakes
1/2 cup peanut butter
1/2 cup semisweet chocolate chips
1/3 cup honey
1 tablespoon of chia seeds
1 teaspoon of vanilla extract

Directions

  1. Stir all ingredients together in a medium mixing bowl until throughly combined.
  2. Roll into tablespoon sized balls and place on cookie sheet with parchment paper.
  3. Cover with plastic wrap and chill for at least 30 minutes.
  4. Store them in an air tight container or place in a freezer bag for storage.
  5. Makes about 12-13 bite sized snacks.
  6. Try not to eat them all at once. 😉

Cook Time: 0 minutes
Yield: About 1 Dozen
